Our family's tamale business began several generations ago in Colinia Miguel Hidalgo in Culiacan, Sinaloa, Mexico. At a young age, my mother, Maria, learned recipes from her mother, Maria de Los Angeles, better known as Angelita. Maria would help with the assembly of the tamales. Angelita would sell them to neighbors, friends, and other locals in the area. She too had learned from her mother, Ramona Barraza, that also learned from her mother, and her mother before. In 1969, my mother came to California for a better life. In the early 1980's, my mom would make tamales for the holidays and everyone would compliment her on them and ask if they could place orders. She began to sell the tamales to her clients. The years have come and gone and now my children have become involved in this tradition. And the rest, they say, is history.
As with many foods, there are different variations of the tamale. To stay true to our roots, we have maintained the same recipe that my ancestors used. The Sinaloa style tamale traditionally is made with a protein and vegetables, like carrots, potatoes, pasilla chiles, and, of course, the olive.
Our best selling tamales have always been the red beef tamale. We also have great chicken with red sauce, sweet tamales with pineapple and raisin, and of course a crowd favorite, the cheese and pasilla chile.
